Speaking of cute....Wal-Mart has some really cute melamine plates. I bought the red and white. They also have them in blue and white. I guess I'll go back and get the blue/white~ wouldn't they all be cute for a July 4th table?
Can't have to many cute plates!

This week has been challenging to say the least. It started Wednesday when I was working at Canton. At 5:30 my Mother called my cell phone and told me she had fallen again and thought she had broken her left hip. Mother fell in her kitchen. Just last November she had fractured her right hip~ she was 5 1/2 months in recovery from that fall. It turns out Mother did fracture her left hip. She had surgery Thursday and is now resting well. So we start again with many trips to the hospital and then to rehab.
This weekend was Canton Trades Day~ I was there to help set-up on Wednesday, missed Thursday because of Mother's surgery. I did work on Friday and Saturday. Friday was the BIG TORNADO! As soon as Monica and I got to Canton the rain started then the wind started blowing very hard...We had no idea a tornado was headed our way. The alarm system for the city of Canton failed to work. That tornado went right over us, right over the Arbors..I had never heard wind blow that hard~ we heard all kinds of things falling and glass breaking. Then the alarm system went off (a little late) after the tornado past us. It flipped a truck in the road right in front of the entrance of Canton Trades Day~ A lot of the outside vender's received damages as well. I don't know if anyone was hurt...we were all OK. It's really scary to think what could have happened. That's the closest I've ever been to a tornado...
Please remember my Mother Margie in your prayers...

This ain't my mama's raisin pie! It's Margie's recipe. Mother's raisin pie's are so pretty! This pie I made is really ugly~ there's no way I'm showing the whole pie... But, it taste so darn good...even if you aren't a "raisin" fan...you'll like this pie recipe~ I PROMISE! I need to work on my top crust skills... = )
In a sauce pan add 1 box raisins...
1 cup sugar...
1 tablespoon vinegar. Cook in water until raisins are tender.
Mix~
1 cup sugar
5 or 6 tablespoons flour
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1 teaspoon cinnamon
Mix and add to raisins...
Cook slow until mixture thickens. Doesn't take long.
Pour into un-baked pie crust. Add pads of butter over pie. I know, I know~ to many butter pads ; - ) I like butter!
Add top crust...
Bake @ 425 30 minutes or longer. Or until golden brown...
Raisin Pie~
1 box raisins
1 cup sugar
1 tablespoon vinegar
Cook in water until raisins are tender.
Mix~
1 cup sugar
5 or 6 tablespoon flour
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1 teaspoon cinnamon
Mix and add to raisins and cook slow until mixture thickens. Pour into un-baked pie crust. Add pads of butter over pie. Add top crust. Bake @ 425 30 minutes or longer. Or until golden brown.
Pie Crust~
3 1/4 cups flour
1 teaspoon salt
1 1/2 cups vegetable shortening
4 to 5 tablespoons ice water
Combine the flour and salt in a bowl. Add the shortening and work it in with your hands until mixture resembles coarse crumbs. Add the water, 1 tablespoon at a time, working it in with your hands. Add only as much as you need to make a smooth ball of dough. Wrap it in plastic wrap and refrigerate for at least 30 minutes. Remove the dough from the refrigerator and place it on a lightly floured surface. For 2 crusts, cut the dough in two and put the second half back in the refrigerator. For each crust, roll the dough out on the floured surface into a circle about 12 inches in diameter and 1/8-inch thick. Gently fold the circle of dough in half again so that you can lift it without tearing it, and unfold into a 9-inch pie pan.
